Cooking healthy meals that are also yummy can be quite challenging-especially with picky little eaters! But IT IS DOABLE! If your house is anything like mine, some foods bring delight for some and disgruntle from others. Oatmeal is one of those meals in our house. I have to admit, I like the smell of oatmeal, but I’ve never really been a big fan of eating it-too mushy! And I have one child who follows in her mama’s way on this meal. But I also have another who LOVES oatmeal.
What’s a mama to do? Thankfully I have great friends who love to cook healthy also like my friend Jennifer. (Check out her website here.) She gave me this recipe and told me my kids would love it-and she was right. My whole family loves it! It doesn’t have the mushy texture of traditional cooked oats-YAY!
We adapted her version (I’ve found I do that a lot with recipes :)) so we could soak the oats overnight making them more digestible and healthy. This also makes this recipe a snap to finish in the morning. Here’s our version:
1 C milk
1/4 C yogurt, kefir, or whey
2 TBS butter-melted and cooled
1/4 to 1/3 C maple syrup or honey
3 C whole rolled oats
1 tsp cinnamon
2 eggs
10-12 oz fruit (berries, peaches, apples*)
Mix first 5 ingredients in bowl, cover and leave on counter overnight. If using frozen fruit, place them in baking dish and put in fridge to defrost. In morning, place dish with fruit in oven while oven preheats to 350. Mix in eggs and cinnamon with oat mixture. Once oven is preheated, spoon oat mixture over fruit and bake for about 20-25 minutes until bubbly. We love to top this with a spoonful of homemade sour cream-yummy and healthy!
*If using apples, chop them in the morning and add about 1/3 C apple, orange or pineapple juice over them otherwise it tends to be too dry.
