In this crazy, fast paced world it’s hard to get everything done we need to in a day and maintain a healthy diet. Taking care of family and kids, keeping up with housework, working, and then deciding on a healthy meal at the end of the day is about too much-much less actually having to cook and clean up that meal. Ugh! Who has time? Well, you do, mama! You’ve just got to work smarter not harder and use that crock pot of yours more.
Now, I’m actually speaking to myself too here because I often use my crock pot in the winter for things like chili or soups, but then the rest of year, it seems to get forgotten. But it’s time we dig those wonderful inventions out and begin using them to help relieve some of the stress of our day and make some yummy and healthy meals. Ah!—Do you hear the voices singing as you think of that crock pot full of a warm, healthy meal that you just have to serve? I think I do. 🙂
One of my favorite meals to make in the crock pot is chicken, green beans and potatoes. When cooked all together and herbed up, it is so flavorful. And it’s super simple and versatile.
Crock Pot Chicken, Green Beans, and Potatoes
- large crock pot (see the one I use here)
- 3 lbs chicken legs or breasts
- 5 medium potatoes
- 1 lb frozen green beans
- 1/2 cup water
- 1 medium onion chopped
- 6 TBS pastured butter
- 1 TBS garlic powder
- 1 tsp turmeric powder
- 1/2 tsp curry powder
- 1 TBS dried rosemary
- 2 TBS grated parmesan
- salt and pepper to taste
Layer potatoes, green beans then chicken in crock pot. Add water and onion. Slice butter into cubes and toss on top of chicken then sprinkle seasoning in. Cover and cook on high for 6 hours or on low for 8-9 hours. (Chicken should register 165 degrees internally when cooked. ) Now sit back, relax and know that supper will be ready and waiting!
Best of all, this recipe is gluten free and healthy. Try your own spices and seasonings and let us know how you like your crock pot chicken, green bean and potatoes. Just be careful if you buy premixed seasonings; sugars and artificial preservatives are often in those. And if you are sensitive to dairy or wheat, they often have traces of those ingredients as well.

What a great idea! For our family, I’d probably exchange the potatoes for either sweet potatoes or cauliflower, but this looks delicious. I’m also always on the lookout for recipes that use turmeric, so this one would be especially good for us!
Might have to try it tomorrow night after I get some green beans!
