If you have given up grains or gluten, but are missing some of your old favorite foods then this recipe is for you! We found this recipe by accident and it was one accident we are all glad happened. And while on the GAPS diet, this became a staple breakfast food and has remained. It tastes so good! All of my kids love them and you can’t even taste the bananas. The texture is fluffy and they are sweet so you don’t need much (if any) syrup. But if you do smother them in syrup make sure you only use real maple syrup! Smothering them in real, pastured butter is a must though-and adds healthy fat-soluable vitamins.
- Heat coconut oil or butter in iron skillet or griddle on medium/low. Combine eggs and banana in bowl and mash with potato masher or place in blender on low until combined well but not pureed. Pour into hot pan and cook until top begins to bubble. Flip and cook the other side for 1-2 minutes.
With such a quick, easy meal, mornings may just become a bit brighter and healthier!
