We have survived our week one of the GAPS diet and made it through the Intro Diet into the Full GAPS Diet. Woohoo! That means that we can now have fruit and honey. In other words, we can have dessert. And so to celebrate, we made this GAPS approved apple pie. And let me tell ya-it was yummy!
But taste wasn’t the only great part. It was so easy to throw together. Containing only a few ingredients, all of which I already had on hand, makes this pie an easy weeknight treat. And yes, every ingredient is GAPS friendly, which also means gluten free. Yes, it is possible to have a GAPS approved apple pie that tastes great and is a breeze to make.
GAPS Approved Apple Pie Recipe
- 4 apples chopped
- 1/2 stick grass fed butter
- 1 TBS cinnamon
- 1 1/2 c almond flour
- 1 stick grass fed butter melted and cooled
- 2 eggs
- 3 TBS honey
Place the apples and 1/2 stick butter in a pan and cook over med heat until soft. About 5-10 min. Sprinkle in the cinnamon and mix well. Pour into deep dish pie pan. (My favorite is similar to this one.) Mix the melted butter, almond flour, eggs and honey. Pour over the apples. Bake at 350 degrees for about 20 minutes or until golden and bubbly. We topped it with homemade sour cream and a drizzle of honey.
