If you’ve been following me, you remember in January we went through a month long detox and cleansing process. This process included us consuming charcoal, fiber and other herbs to help clean us out, but it also included us not consuming processed sugars and foods as well as any grains.
Since we had done this before, I had some old recipes that I could easily pull out that were grain free, but as with most people, I wanted to adapt our favorite recipes. Who wants to give up pizza for a month, right? And honestly, I really enjoy the challenge of taking a not-so-healthy recipe and fixin it up. Or taking a recipe that includes grains, wheat, or dairy and making them fit for the gluten-free, lactose-free crowd-like this grain and gluten free peach cobbler.
That’s exactly what I did with my baked oatmeal recipe. We absolutely LOVE it, and it is gluten free, but not grain free. And the best thing was that I now have a new favorite. Yes, we’ve added grains back into our diet, but we still choose this because it’s so good!
My new favorite dessert is grain and gluten free peach cobbler. It’s cobbler for goodness sakes, so it has to be good. But let me just get your mouth watering. The crust is so fluffy with that gooey bottom typical of cobbler. It’s fruity and sweet, but has no processed sugar. Ok, I could go on, but let’s just get to the recipe.
- 1/2 c orange juice
- 1 cup milk substitute Almond milk for dairy free alternative
- 2 eggs
- 1/3 c maple syrup
- 3 c almond flour
- 1/2 c tapioca flour
- 1 TBS baking powder
- 1 tsp vanilla extract
- Pour peaches into casserole dish. (I like to slice them in half to make them bite size, but this is optional.) Pour orange juice over. Place in 350 degree oven while you prepare batter for crust. Crust: Mix remaining ingredients in a separate bowl. Remove dish with peaches from oven. Pour batter over. Place back into oven for 20-25 minutes or until crust is golden brown. And there you have it-gooey, yummy, healthy gluten free peach cobbler.
Serve warm with homemade sour cream for some added probiotic goodness. In the mood for apple cobble or blueberry? Yep, I tried those too and they were just as good. Just exchange the peaches for apples or blueberries. Or try your own! Just don’t forget to come back here and share your favorite with us. 🙂
